Place rice noodles in a large bowl and cover with warm water. Let soak for 30 minutes until pliable but not fully soft. Drain well.

Whisk together tamarind paste, fish sauce, palm sugar, and 2 tablespoons of water until sugar dissolves.

Heat 2 tablespoons oil in a large wok over high heat. Add tofu cubes and fry until golden and crispy on all sides, about 5 minutes. Remove and set aside.

Add remaining oil to wok. Scramble eggs quickly, then add garlic. Add noodles and sauce, tossing constantly. Add tofu and half the bean sprouts. Toss until noodles are cooked through.

Transfer to plates and top with remaining bean sprouts, crushed peanuts, green onions, and lime wedges for squeezing.
