Pat beef cubes very dry with paper towels. Season with salt and pepper. Heat oil in a large skillet over high heat. Sear beef in batches until deeply browned on all sides. Transfer to slow cooker.
In the same skillet, sauté onion until softened. Add garlic and tomato paste, cook 1 minute. Deglaze with a splash of broth, scraping up browned bits. Pour into slow cooker.
Add potatoes, carrots, and celery to the slow cooker. Pour in remaining broth and Worcestershire sauce. Nestle in thyme sprigs and bay leaves.
Cover and cook on LOW for 8 hours or HIGH for 4 hours, until beef is fork-tender and vegetables are cooked through.
Remove thyme stems and bay leaves. Taste and adjust seasoning. Ladle into bowls and serve with crusty bread for dipping.
