Combine flour, yeast, salt, and water. Mix until a shaggy dough forms. Turn out and knead for 10 minutes until smooth and elastic. Shape into a ball, cover, and let rise 1-2 hours until doubled.
Crush tomatoes by hand into a bowl. Add a pinch of salt, minced garlic, and a drizzle of olive oil. Do not cook—raw sauce is traditional.
Divide dough in two. On a floured surface, stretch each ball from the center outward, working in a circle, leaving edges slightly thicker for the crust. Target 12-inch rounds.
Place on a preheated pizza stone or inverted baking sheet. Spread thin layer of sauce, leaving border. Add torn mozzarella. Bake at 500°F (or highest setting) for 10-12 minutes until crust is charred in spots.
Remove from oven and immediately top with fresh basil leaves and a generous drizzle of olive oil. Slice and serve immediately.
