In a bowl, whisk together lemon juice, olive oil, garlic, rosemary, thyme, lemon zest, mustard, salt, and pepper until well combined.
Place chicken in a shallow dish or resealable bag. Pour marinade over, turning to coat all sides. Cover and refrigerate for at least 30 minutes, up to 4 hours.
