Mix chicken with yogurt, 1 tbsp garam masala, turmeric, and salt in a bowl. Cover and refrigerate for at least 1 hour, ideally overnight for deeper flavor.
Heat 2 tbsp butter in a large skillet over high heat. Add marinated chicken in batches and cook until charred on edges, about 3-4 minutes per side. Remove and set aside.
Add remaining butter to the pan. Sauté ginger-garlic paste for 1 minute. Add remaining garam masala, chili powder, and cumin. Cook 30 seconds. Pour in tomato puree and simmer for 15 minutes.
Stir in cream and sugar. Add chicken pieces and simmer for 10 minutes until sauce thickens and chicken is cooked through.
Finish with a swirl of cream and fresh cilantro. Serve hot with basmati rice or warm naan bread.
