Place sourdough slices in a toaster or under a broiler until golden and crispy on both sides.
Cut avocados in half, remove pits, and scoop flesh into a bowl. Add lemon juice, salt, and pepper. Mash with a fork to desired consistency—chunky or smooth.
Fill a saucepan with 3 inches of water and add vinegar. Bring to a gentle simmer (small bubbles). Create a gentle whirlpool with a spoon, then carefully slide in each egg. Cook for 3-4 minutes for runny yolks.
Spread avocado mixture generously on each toast slice. Using a slotted spoon, lift poached eggs and blot dry, then place on top of avocado. Sprinkle with red pepper flakes and chives.
